Coconut Sugar



C o c o n u t   S u g a r


Made from the sap of coconut palm tree; extracted, boiled and dehydrated; the glorious brown sand that is a slightly better alternative for sweetener compared to regular table sugar. It is often mistaken as palm sugar, which is similar, but entirely made from a different type of palm tree.

Coconut sugar is high in sucrose but low in fructose and glucose. It's good news as we want to keep our fructose consumption as low as possible. Coconut sugar also has iron, zinc, calcium, and potassium. 

Note that sugar consumption should always be on the minimal. My recipes use coconut sugar but it is optional. If you can do without it, that would be better.
