Chunky Rawnola

I n g r e d i e n t s

1/2 cup rolled oats
1/4 cup unsweetened desiccated coconut
1/4 tsp cinnamon powder
1/8 tsp vanilla seeds
12 medjool pitted dates, chopped

M e t h o d

Combine oats, coconut, cinnamon and vanilla in a blender and pulse a bit until they're slightly mixed.
Add dates bit by bit, pulse and repeat until mixture starts to stick together making a chunky texture.
Push mixture from the side to the middle when you cannot pulse.
Store in an airtight container in the fridge for up to 7 days.
